In addition to providing bulk and decreasing the transit time of fecal matter, thus decreasing the risk of colon cancer and hemorrhoids, barley's dietary fiber also provides food for the "friendly" bacteria in the large intestine. When these helpful bacteria ferment barley's insoluble fiber, they produce a short-chain fatty acid called butyric acid, which serves as the primary fuel for the cells of the large intestine and helps maintain a healthy colon. These helpful bacteria also create two other short-chain fatty acids, propionic and acetic acid, which are used as fuel by the cells of the liver and muscles.
The propionic acid produced from barley's insoluble fiber may also be partly responsible for the cholesterol-lowering properties of fiber. In animal studies, propionic acid has been shown to inhibit HMG-CoA reductase, an enzyme involved in the production of cholesterol by the liver. By lowering the activity of this enzyme, propionic acid helps lower blood cholesterol levels.

Low Fat Diets Do Not Help you Lose Weight
“The Women’s Health Initiative, which is the largest clinical trial of diet and body weight, found that 50,000 women on low-fat diets had no significant weight loss. Yet another study looked at people who followed four different diets for 12 months — and found no dramatic differences between those who followed low-fat, low-carb and very- low-carb diets….
“ In one study, for example, Dr. Ludwig and his colleagues followed 276 people for six years.(ii) They performed a glucose tolerance test at the beginning of the study and looked at insulin concentrations 30 minutes after the people consumed a sugary drink. This gave the researchers a rough estimate of whether they were high or low insulin secretors.
“During the course of the study, they looked at the people’s body weight and waist circumference or belly fat. They found that those who were the highest insulin secretors had the biggest change in weight and belly fat compared to the low insulin secretors. And people who were high insulin secretors and ate low-fat diets did even worse.
This makes perfect sense — because insulin does two things:
1. It stimulates hunger.
2. It is a fat storage hormone, which makes you store belly fat.

Teenagers and sugar
In a recent study published in Circulation: Journal of the American Heart Association, it was discovered that teenagers “ with higher added sugar intake had 9 percent higher LDL and 10 percent higher triglyceride levels than teens with the lowest added sugar intake."Adolescents are eating 20 percent of their daily calories in sugars that provide few if any other nutrients," says study author Jean Welsh of Emory University. “
The problem arises in the types of foods and drinks teens are eating. Soda pop and energy drinks are high in the list. They tend to be on the move and pick up quick snacks that have been marketing to them and have hidden high amounts of sugar. This can lead to many issues in later life such as insulin resistance and heart disease, later in their life.

Soy
There is still much controversy about the use of soy.
Pro: Soy does seem to have cardio-protective benefits, and it clearly helps ease menopause symptoms. However, the very reason soy works so well for lowering cholesterol and relieving hot flashes is because it is an effective estrogen mimic.
Con: It stands to reason it could be a concern for those with estrogen-dependent cancers or thyroid issues. And, most problematic, it seems, is the feeding of those estrogens to infants whose little bodies aren’t prepared for the estrogen onslaught.

Floride
Floride has been placed in our water system for years because it strengthens the enamel of teeth and reduces tooth decay. To little floride, there are more cavities; too much there is a white discoloration on teeth. The breakdown products of caffeine will tend to increase insulin levels. Insulin enables blood sugar to move to our biochemical “factories” in the cells, where it’s burned as fuel for your body. Glycemic Index
The glycemic index (GI) is a measure of how carbohydrates effect on blood sugar levels. If a sugar or carbohydrates is broken down quickly during digestion and release glucose quickly into the blood it is considered a high GI. It the carbohydrates that break down more slowly, releasing glucose more gradually into the bloods, it is a low GI. A lower glycemic response usually means that there is a lower insulin demand and improves long-term blood glucose control and blood lipids. A low-GI food will release glucose more slowly and steadily.
High GI- 70+ - High Glycemic foods elevate blood glucose and insulin levels, and stimulate fat-storage.
Med GI– 50 –
Low GI - < 50 - Low Glycemic foods do not overly elevate blood glucose and insulin, and do not stimulate lipoprotein lipase (LPL) fat-storing mechanisms.

1-1-11
My mother used to say, “Enjoy the age you are today, because you only get one chance to live it.” I turn one year older, today 1-1-11. It is such an auspicious day to start a new year. What will this year bring?
Each day is a new beginning … a chance to remove the past and create the future. We only have one chance to live it. It is up to us to turn each event of the day into an opportunity. The real power of positive thinking is how our intention and expression of thoughts can influence and change our reality and sense of self. We each have the power to change the future, but creating positive intentions today.
Last evening, New Year’s Eve, our dog Remedy was sprayed by a skunk right in the middle of our evening of celebration and family games. Instead of being upset, we simply cleaned the dear dog with 1 qt. Peroxide, ¼ cup baking soda, a dash of dist soap. Within an hour, Remedy was fresh and clean and we were back playing cards. Instead of complaining, it will mark last evening as a memorable event that we can long talk about.
